Tunisian Makroudh


  • 800 g flour

  • 250 g melted butter( possible to mix butter and olive oil)

  • 1/2 tea spoon of cinnamon

  • 1/2 tea spoon of salt

  • 400 ml mixture of water and rose water

  • For the stuffing : 500 g of date paste

  • 1 soopn of melted butter

  • 1 tea spoon of cinnamon

  • Small amont of rose water

  • Sunflour oil for frying

  • Honey


1. Mix in bowl flour salt, cinnamon, melted butter.
2.Mix very well the butter with flour.
3.Leave stand overnight.
4.Stuffing: mix very well date paste with all ingredient and make a long sausage that you wrap with fil and leave on the side.
5.Making makroudh: take small part of the mixture od flour and add some water mixed with rose water.
6.Take always small parts of the mixture of flour and not all the quantity and not use too much water otherwise it will be hard after frying.
7.Make a sausage with flour mixture and dig a long hallow on the sausage.
8.Put the sausage of date paste on the dig of flour and close the flour mixture.
9.Flat the mixture on table and decorate with special wooden tool for makroudh.
10.The tool make nice form on top of the makroudh with same size.
11.Continue with the total quantity.
12.Fry the in hot oil to get nice coulor.
13.Remove from frying pan and mix with honey and rose water or date syrup.
14.Keep in the mixture of honey or date syrup for 10 min.
15.Remove and place in a drainer.
16.Kool for few hour and then serve with mint tea.



  • 200 g flour

  • 3 eggs

  • 150 g of pitted dates / diced dates

  • 80 g crushed walnuts

  • 30 ml of extra virgin olive oil

  • 150 g sugar

  • 1 bag ( 5 g) baking powder


  • In bowl mix eggs with electric blender  for 8 minutes

  • Add flour, baking powder, cinnamon, crushed walnut and olive oil and mix all

  • Add dates cut in small pieces mix with a spatula

  • Put oil on a cake mold and then pour all the mixture

  • 30 ml of OYYA extra virgin olive oil

  • Bake in an oven 180 °c for 45 minutes

Dates Cookies


  • 150 g flour

  • 1 egg

  • 150 g of pitted dates

  • 80 g of hazelnuts

  • 30 g of melted butter

  • 70 g of date powder

  • ½ baking powder bag (5 g)


  • Mix the egg with date sugar for few minutes

  • Add flour, melted butter, and mix gently until you get homogenous mixture

  • Cut pitted dates in small pieces

  • Form small ball of cookies and let stand for few minute on baking paper

  • Bake in an oven for 190 °C for 20 minutes
